Crazy Good Egg Tacos (10 Minute)

Egg tacos are my favorite way to eat eggs. The slightly spicy eggs are topped with cheese, salsa, & fresh cilantro, making them superb for any meal of the day!

Ingredients

  • 8 large eggs
  • 1 tbsp chili powder
  • 1 tsp salt adjust to taste
  • 2 tbsp unsalted butter
  • 4 taco tortillas corn or flour
  • 1/2 cup salsa
  • 1/4 cup cilantro chopped
  • 1 cup Mexican cheese

Instructions

  • In a large bowl, whisk the eggs with the chili powder and salt.
    Eggs in a bowl with seasoning.
  • Preheat a pan with butter. Scramble the egg mixture in the pan, scraping only the bottom of the pan as the eggs cook to prevent breaking the eggs up too much. The eggs should take around 3-4 minutes to cook all the way through.

  • Heat the tortillas over an open flame for a nice sear or in the microwave for 10 seconds until they're slightly softened. Place the egg mixture into the center of the tortilla.

  • Top the egg mixture with cheese, salsa, and cilantro. Enjoy!
