2 cups cold leftover mashed potatoes 1/2 cup all-purpose flour add a little more if your potatoes are very creamy 2 large eggs 1/2 cup shredded cheddar cheese In a large bowl, mix together the mashed potatoes, flour, and eggs until smooth.
Stir in the shredded cheese.
Preheat the waffle iron and spray it lightly with cooking oil. Set it to high heat — that’s what makes the waffles crispy.
Scoop about 1/2 cup of the potato mixture into the center of the waffle iron. Close the lid and cook the waffle until it is golden and crispy.
Repeat with the rest of the batter. Enjoy!
