Ingredients

  • 2 cups cold leftover mashed potatoes
  • 1/2 cup all-purpose flour add a little more if your potatoes are very creamy
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese

Instructions

  • In a large bowl, mix together the mashed potatoes, flour, and eggs until smooth.

  • Stir in the shredded cheese.

  • Preheat the waffle iron and spray it lightly with cooking oil. Set it to high heat — that’s what makes the waffles crispy.

  • Scoop about 1/2 cup of the potato mixture into the center of the waffle iron. Close the lid and cook the waffle until it is golden and crispy.
