If you’ve ever wondered what to do with leftover mashed potatoes, these mashed potato waffles are the recipe you’ve been waiting for. Instead of just reheating mashed potatoes in the microwave, I love turning them into golden, cheesy waffles. Our boys are also absolutely obsessed with them — they’re crispy on the outside, soft and creamy on the inside, and so fun to load up with toppings. These mashed potato waffles are seriously so easy to make — they’re a lifesaver for us busy moms. 20 minutes, four ingredients, and two steps!

  • Make the waffle “batter”: Mix together all the ingredients in a large bowl.
  • Cook the waffles: Preheat the waffle iron (I’ve been loving this one lately) on high heat. Lightly spray it with cooking oil, then cook the waffles in batches.

Hot tip: Keep the cooked waffles warm in the oven at 200°F.

I’ve made several dozen batches of these potato waffles over the years, and these three tips are crucial for a shatteringly crisp bite and perfect flavor every time.

  • Use cold leftover mashed potatoes. This is the most important tip! Cold, firm mashed potatoes hold their shape better and crisp up beautifully. Warm or freshly made potatoes have too much moisture and can result in a softer, steamier waffle.
  • Adjust the consistency as needed. If the batter feels too sticky, add a sprinkle of extra flour — just enough to bring it together.
  • Grease the waffle iron each time. Don’t be shy with the cooking spray or oil. A well-greased waffle iron helps to prevent sticking and ensure a uniform, golden-brown finish.
