Preheat the oven to 400°F. Combine all the dry ingredients in a large bowl.
Mix in buttermilk, eggs, melted butter, and vanilla (if using) to the dry ingredients.
Grease or line a 13x18 inch sheet pan. Pour the batter into the pan and spread into an even layer. Add optional toppings.
