- 4 cups seedless watermelon cubed
- 1 cup cucumber sliced
- 3 oz feta cubed
- 1/3 cup mint freshly chopped
- 2 tbsp oil avocado or olive
- 2 tbsp lemon juice or lime juice
- 1/2 tbsp honey
- 1/8 tsp salt adjust to preference
In a small bowl or jar, combine the olive oil, lemon juice, honey, and a pinch of salt. Whisk until well combined. Set aside.
In a large bowl, add the watermelon, cucumbers, feta, and mint. Drizzle the dressing over it. Toss to combine.
Store in the fridge covered until ready to serve. Enjoy!
