So, in tribute, I’ve created this watermelon feta salad recipe to include the Greek flavors that captured my heart during our travels.

If you never considered combining sweet watermelon, crunchy cucumbers, salty feta, and cooling mint in a salad, you’re not alone. My brain didn’t even fathom how the combination could work until I tried it for myself — and one bite in, I was hooked.
- Make the dressing: In a small jar or container, mix together the olive oil, lemon juice, honey, and salt. Whisk or shake vigorously to combine.
- Prepare the salad ingredients: In a large bowl, combine the watermelon, cucumbers, feta cheese, and fresh mint.
- Toss the salad: Drizzle the dressing over the salad, then toss to combine. Refrigerate until ready to serve and enjoy!
Hot tip: There’s a decent amount of cutting, chopping, and slicing to make this salad. You’ll definitely need a good cutting board and knives to make it a breeze.

This salad takes 10 minutes to make — which is faster than it takes most kids to come when we call them for dinner! Heed these three tips and your kids will be rushing to dinner quicker than ever when this salad is on the menu.

- Drain excess juice: Watermelon and cucumbers are extra juicy, so you may get an abundance of juice in the bottom of the salad bowl. Drain any excess liquid prior to serving.

Storing Greek Watermelon Feta Salad
If you find yourself with a bowl of leftover salad, put it in the fridge for up to one day. Keep in mind that the cucumbers and watermelon will release more juices the longer the salad sits.
