Easy Chicken Noodle Soup

Easy chicken noodle soup will take you back to your childhood with each slurp. This is one of those great recipes that you should always have in your back pocket.

Ingredients

  • 3 qt chicken broth
  • 1 large carrot slice into bite-size pieces
  • 1 lb chicken sliced into bite-sized pieces
  • 1/2 cup noodles
  • 3 medium potatoes sliced into bite-sized pieces
  • 1/2 cup scallions chopped
  • 1/4 tbsp black pepper
  • 1/2 tbsp salt adjust to taste

Instructions

  • Fill a pot with 3 quarts of chicken broth. Add sliced carrots and chicken; let it cook for about 10 minutes.

  • Add potatoes and let it simmer for 10 more minutes.

  • Add noodles and season with black pepper and salt to taste. Cook until the noodles are fully cooked. Add scallions and other fresh herbs.

  • Serve while the soup is hot.

Notes

Note: You can use pre-cooked chicken. Boil the chicken in salted water for 10 minutes, rinse and follow the recipe instructions.
