This salad is filled with great flavor of all those veggie and a nice hint of sweet, sour flavor from ketchup.
During the summer season it is easy to find organic zucchini for cheap at farmers markets. Zucchini has a lot of great benefits such as mineral, vitamins and fiber.
- 3 medium Zucchini diced in small cubes
- 2 large Carrots grated
- 2 Large Onions
- 1 Garlic Clove pressed
- 1/2 cup Ketchup
- 1/4 cup Olive oil
- Salt & Pepper to taste
Preheat skillet on a medium heat with olive oil, add onions and carrots, saute for about 3 minutes.
To the cooking ingredients add zucchini and garlic. Pour ketchup, season salt and pepper to taste.
Lower heat to a medium- low and cook for another 20 minutes. Salad can be served cold or hot.
