- 4 salmon fillets
- ½ tsp smoked paprika
- 1 ¼ tsp garlic parsley salt divided
- 4 tbsp oil avocado or olive, divided
- 1 medium yellow onion diced
- 1 cup uncooked orzo
- 2 cups chicken stock
- 1 cup asparagus cut into 1-inch pieces
- 1 cup cherry tomatoes halved
- ½ cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 1 tbsp freshly squeezed lemon juice
- Fresh basil for garnish
- Freshly ground black pepper for serving
Instructions
- Pat the salmon fillets dry with a paper towel. Season both sides with the 1/2 tsp smoked paprika and 1/4 tsp garlic parsley salt.
- Heat a large, deep skillet over medium-high heat for 2–3 minutes. Add 2 tbsp of oil and swirl to coat the pan. Place the salmon fillets skin-side up and sear for 3–4 minutes. Flip and cook them for another 2–3 minutes, or until they are cooked to your desired doneness. Transfer the salmon to a plate.
- Add the remaining 2 tbsp of oil and diced onions to the same skillet. Sauté the onions for 2–3 minutes, until they are softened.
- Add the orzo to the skillet and toast it for 1–2 minutes, stirring frequently.
- Pour in the chicken stock and stir in the remaining 1 tsp garlic parsley salt. Bring the mixture to a boil, then reduce the heat to medium-low. Simmer the mixture for 5 minutes, stirring occasionally.
- Add the asparagus and tomatoes, continue cooking for 3–4 minutes, stirring occasionally, until the orzo is tender and the asparagus is crisp-tender.
