- Grill the peaches: Place the peaches cut-side down on the grill and cook for 3–4 minutes. Flip the peaches and cook them for another 2–3 minutes.
- Assemble the dish: Place two halves of a peach on each plate and add a scoop of ice cream. Finish it off with a drizzle of honey and fresh mint.

- Choose the right peaches. Look for ripe peaches that are still quite firm. Avoid soft peaches, as they will fall apart under high heat. I love the freestone variety of peaches at my local farmer’s market because the pits pop right out!
- Grill the peaches ahead of time (optional). If you have guests coming over for a BBQ and the grill will be busy, grill the peaches in advance. When you’re ready to serve, simply pop the peaches under the broiler in the oven for a few minutes to warm them back up.
