When I have to choose between cooking or baking, I choose cooking 9 out of 10 times. I definitely consider myself a cook more than a baker! But — puff pastry is my go-to and my secret key to success when I need to bake something real quick.

Puff pastry is so versatile — you can make so much ranging from sweet to savory and perfect across all different mealtimes. When I’m really short on time, I often grab a package of store-bought puff pastry from Trader Joe’s, but nothing beats my easy homemade puff pastry dough made from scratch.

Tips When Making or Working With Puff Pastry

Puff pastry is so easy to bake with, but there are a few tips that will make the result that much better.

  • Keep everything cold: If you’re making your own puff pastry, make sure the wet and dry ingredients are all cold and stay as cold as possible. This means cold butter, ice cold water, and cold all purpose flour. If using puff pastry sheets from the grocery store, try not to let them come to room temperature.
  • Avoid over-handling the dough: Try to minimize how much you shape the dough. The more you fuss around with it, the flatter the pastry becomes.
  • Work on a lightly floured surface: When you are ready to bake with your puff pastry, flour the service you are working on so the dough doesn’t stick.
  • Use an egg wash (optional): If you really love the golden-brown look of baked puff pastry, apply an egg wash to the pastry right before baking.
