This baked Brie features buttery melted Brie cheese and fig jam encased in flaky puff pastry. It makes the perfect appetizer for your next party, movie night, or holiday!

“Crazy easy” is my slogan when it comes to cooking, and this baked Brie is the perfect example of that. I can whip it up so quickly for my family or guests, and everyone always loves it. Although I keep things simple here with only five ingredients (does water even count?), you can adapt the recipe to your liking and add whatever toppings your heart desires. The combination of the flaky crust and ooey-gooey cheese is magical… try it if you don’t believe me!
Love Brie? These Brie and cranberry bites are right up your alley — they’re sweet, tart, and simply delightful!

How To Bake Brie in Puff Pastry
This fancy appetizer comes together in under 30 minutes with a few ridiculously easy steps. Think of it as folding up a little package with a cheesy surprise inside!
- Prepare the oven and pan: Preheat the oven to 425°F and line a baking sheet with parchment paper. Alternatively, bake the Brie in a cast iron skillet.
- Roll out the puff pastry: Use a rolling pin to roll the puff pastry into a 10×10 inch square on a lightly floured surface. Transfer the puff pastry to the baking sheet.
- Add the cheese and jam: Add the wheel of Brie to the center of the puff pastry sheet and spread the jam on top.
- Assemble the package: Fold one edge of the pastry over the cheese and brush it with the egg wash. Repeat the process with the remaining pastry until it fully encloses the cheese, then brush the top with egg wash and make four shallow cuts.
- Bake the Brie: Bake the Brie for 20-25 minutes, or until the pastry is golden brown.

Ingredient Variations
I like to keep things simple when I cook (especially if I have guests coming over), but variety is the spice of life! Try any of these twists to elevate your baked Brie.
- Jam: Swap the fig jam for raspberry jam, apricot jam, blackberry jam, cranberry sauce, or pepper jelly.
- Nuts: Add a nutty crunch with toasted and chopped walnuts, pecans, hazelnuts, or pistachios.
- Dried fruit: Sneak in dried cranberries, figs, apricots, or raisins.
- Herbs: Refresh the palate with rosemary, thyme, tarragon, or sage.
- Sweeteners: Instead of the jam, top the Brie with honey, brown sugar, or maple syrup.
Hot tip: For a savory twist, stuff the baked Brie with sauteéd mushrooms, caramelized onions, or cooked bacon.
Tips From the Kitchen
Although this recipe is so straightforward, it doesn’t hurt to look over a few pointers before starting. Here are my top tips for an absolutely perfect baked Brie.
- Make your own puff pastry. I’ll be honest, I usually buy puff pastry from the store (Trader Joe’s has a great one) because I like having it on hand for unexpected guests. However, homemade puff pastry is unbeatable in terms of flavor and quality. This recipe is so delicious and easy!
- Leave the rind on the cheese. This is up to personal preference, but I like to leave the rind on the Brie to prevent the cheese from oozing out of the puff pastry.
- Allow the baked Brie to rest before cutting in. I know, I know — it’s so tempting to dive right in. The period of resting allows the cheese to firm up a bit so it’s not a gooey mess. Even a few minutes make a difference!

Ways To Serve
I love serving baked Brie as the centerpiece of the table with an assortment of accoutrements. Fresh fruit is always a must — sliced apples, pears, figs, and grapes are my favorites. For a crunch, I add crackers, crostini, baguette slices, or bread. I also offer extra jam and honey on the side for those with a sweet tooth!
Storage & Reheating
Enjoy baked Brie immediately for the crispiest puff pastry. If you end up with leftovers, take these steps to enjoy them again later!
- Storage: Store leftover baked Brie for up to five days in an airtight container in the refrigerator.
- Reheating: Enjoy baked Brie cold, or reheat it in the oven at 350°F until the cheese is melted.

Recipe
Ingredients
- 1 sheet puff pastry thawed
- 12 oz round brie cheese
- 1/4 cup fig jam
- 1 egg
- 1 tbsp water
Instructions
- Preheat the oven to 425°F. Place the puff pastry on a lightly floured work surface and gently roll it out into a 10×10 inch square.
- Transfer the puff pastry onto a parchment paper-lined baking sheet or a cast iron skillet.
- Place the Brie cheese in the center of the puff pastry. Spread the jam (and add any other toppings) on top of the cheese.
- Whisk the egg and water together. Fold one edge of the pastry over the cheese and brush it with the egg wash. Fold the next edge over and brush it with egg wash as well. Continue folding and brushing the remaining edges in the same way.
- Brush the top of the puff pastry package with the remaining egg wash. Gently score the puff pastry in four different areas, taking care not to cut all the way through.
- Bake the Brie in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown. Allow the baked Brie to cool for about five minutes before serving. Enjoy!
This was a huge hit at a party! I only baked it for 20 minutes - it was almost to much. Check at 15 minutes.
Thanks for the tip, Renee! I'm glad it was a huge hit. 🙂
