Cinnamon rolls can easily be enjoyed all year round, but something about the warm, sweet, slightly spicy and woody tasting dessert is especially comforting in the fall and winter months. I really love all different types of cinnamon rolls — the classic simple one is amazing, but if you know me, I love branching out, too!

I’ve created six different types of cinnamon rolls that you can easily put on rotation in your house. You’ll scratch that cinnamon roll itch every time, but you won’t ever get sick of just eating the same dessert over and over. I’m confident you’ll find your own personal “best cinnamon rolls” recipes right here!

Cinnamon Roll Tips You Need To Know

There are a few tips I want to share before we get down to the nitty-gritty. Take a quick read through to make sure everything goes super smoothly with your rolls!

  • Make sure the yeast is fresh and active: Nothing is more disappointing than realizing your yeast is expired or old and not doing the job correctly. Test your yeast by mixing it with warm liquid and a pinch of sugar. If it doesn’t foam, it’s expired.
  • Cut the rolls with floss/thread: Instead of potentially squashing the rolls by cutting them with a knife, use a piece of unscented dental floss or thread. Place it under the dough log, cross the ends over the top, then pull in opposite directions to create a clean slice. You’ll have perfect swirls!
  • Avoid overbaking: Be really careful not to overbake the rolls, or they may really dry out. Bake them just until they are a light golden brown and feel firm in the center.
  • Cool slightly before frosting: Let the rolls cool for 5–10 minutes before frosting. This lets the frosting/glaze melt slightly when being put on, but not completely melt and run off the rolls.
  • Prep ahead when needed: In most cases, you can prep the different types of cinnamon rolls the night before. Prep them to the point of baking, then cover and place them in the fridge overnight. In the morning, bake from the fridge or let them come back to room temperature on the counter for an hour before baking.
  • Add toppings (optional): If you want to put your own spin on the rolls, feel free to do so by adding a few ingredients to your filling or on top. You can experiment with blueberries, strawberries, or raspberries mixed into the filling for a fruity twist. Or — add bacon bits, pecans, hazelnuts, and chocolate chips as toppings for extra flavor and texture. Oh, and don’t forget a caramel drizzle if you like!

1. Apple Cinnamon Rolls

When you think of fall fruit, apples are probably one of the top fruits that come to mind. That was my inspiration to make an apple cinnamon roll to celebrate all things fall! Let your taste buds enjoy the finely diced apple pieces while you bite into these delicious cinnamon rolls!

2. No-Knead Cinnamon Rolls

If you don’t have a mixer on hand, this no-knead cinnamon roll recipe for you. There’s “no need” to strain yourself by mixing the cinnamon roll dough for a long time. All you need to do is mix it just enough that there’s no lumps and then leave it — the magic will appear shortly!

3. Brioche Cinnamon Rolls

I’ve fallen in love with brioche bread — it’s so wonderfully rich and decadent, yet light and tender at the same time. It stays soft for so much longer than regular breads, so I thought why not try to make cinnamon rolls the same way! Hence, this brioche cinnamon roll recipe was born. The sweetness and the pillowy soft bite, plus the cream cheese frosting makes these totally next level.

4. Sourdough Cinnamon Rolls

Calling all of you sourdough lovers who have a jar of starter always on the ready. This recipe uses a whopping whole cup of sourdough starter/discard, which is so useful when you’re always wondering what to do with the extra gold!

5. Cottage Cheese Cinnamon Rolls

I’m sure you know the latest “use cottage cheese for added protein” craze, right? I know it, too — and, I love it! An extra benefit to these rolls is that you can make them start-to-finish in under an hour. Amazing, right?

6. Cranberry Orange Cinnamon Rolls

These cinnamon rolls actually don’t have any cinnamon in them (but you can put it in for the warm spice taste if you want!). They’re akin to cranberry orange scones, except with the pillowy, fluffy texture we all love out of our cinnamon rolls. If you’re able to get your hands on some cranberries, you have to give these rolls a try!
