Galettes are basically a member of our family by now. I call them “rustic pies” because they take so little effort — perfect for those juggling too much in life right now to worry about appearance. Just like me, galettes get straight to the point without all the fuss.

I especially love this cherry galette because I can make it year-round. When fresh cherries aren’t in season, frozen cherries work wonderfully. No more waiting around for farmers markets! Plus, this recipe is so easy to customize. I adjust the recipe to whatever I have on hand, and it turns out delicious every time. Oh, peaches are on sale? Great! Let’s throw those in with the cherries. Or maybe I have guests coming over and I want to add that extra “wow” factor. I’ll spread a layer of almond frangipane on the base and sprinkle flaked almonds on the crust. There’s no going wrong here!

If you know anything about me, you know I like recipes that are simple, quick, and tasty. This cherry galette checks all the boxes — see for yourself!

  • Make the crust: Combine the flour and salt in a medium bowl. Grate the butter in with a box grater, or use a food processor to incorporate it. In a separate bowl, whisk together the egg, water, and vinegar, then add it to the flour mixture.
  • Chill the crust: Shape the dough into a disk, wrap it in plastic wrap, and chill for 30 minutes.
  • Prepare the filling: In a large bowl, combine the cherries, sugar, and cornstarch.
  • Assemble the galette: Preheat the oven to 375°F. Roll the dough out into a 12-inch circle on a sheet of parchment paper. Add the cherry filling to the center, leaving a 2-inch border. Fold the border over, pressing the edges together to seal.
  • Bake the galette: Brush the beaten egg onto the crust, then sprinkle sugar on top. Bake the galette for 30-35 minutes. Allow it to cool for 10 minutes, then dig in!

  • Chill the crust. Pie dough needs to be super cold for the perfect texture. When the heat of the oven hits the cold butter, pockets of steam are created in the dough that make it super flaky. Handle the dough minimally, and chill it for at least 30 minutes to ensure the pieces of butter stay intact.
  • Use your favorite cherries. The flavor of this galette depends entirely on the type of cherries you use. If you’re looking for a tart bite, go for sour cherries. If you prefer more sweetness, opt for dark cherries.
  • Keep the cherries frozen. If using frozen cherries, pop the galette into the oven as soon as it’s assembled. Time is of the essence — if the cherries thaw, the juices are more likely to leak out.
  • Amp up the flavor (optional). Add lemon juice, almond extract, vanilla extract, or cinnamon to the filling to complement the cherries.
