As a busy mom with teen boys, I don’t often find the time or motivation for baking. However, this recipe for cosmic brownies is so crazy easy that the whole family fell in love with it!
- Prepare the oven and pan: Preheat the oven to 350°F. Line a 9×13 inch baking dish with parchment paper that overhangs slightly on the sides.
- Whip up the brownie batter: In a large bowl, beat together the melted butter, oil, and sugar with an electric hand mixer. Mix in the cocoa powder, eggs, vanilla, and salt, then fold in the flour.
- Bake the brownies: Pour the batter into the baking dish and smooth it into an even layer. Bake the brownies for 27-32 minutes, then allow them to cool completely.
- Make the ganache: In a small pot over medium heat, warm the heavy cream until it simmers. Remove the cream from the heat, then stir in the chocolate chips until fully melted.
- Top the brownies: Spread the ganache over the cooled brownies and sprinkle on the candy chips. Chill the brownies in the fridge for 1-2 hours, then slice and enjoy.

- Grease and line the baking dish. To keep the parchment paper from slipping around, lightly oil the baking dish. Make sure the paper overhangs on the sides for a hassle-free removal!
- Use butter and oil in the batter. After plenty of testing, we’ve found that these brownies are best with both butter and oil. Butter adds flavor and fudginess to the brownies, while oil makes them chewy and moist.
- Chill the brownies. The classic Little Debbie cosmic brownies are wonderfully rich and dense. How do we recreate this texture? After topping the brownies, we recommend refrigerating them for at least an hour (preferably two) to help them solidify.

Ingredients
Brownies
- 8 tbsp unsalted butter melted
- 6 tbsp canola oil or avocado oil
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 4 large eggs room temperature
- 1/2 tbsp vanilla extract
- 1/2 tsp salt
- 1 cup all purpose flour
Ganache
- 1/2 cup heavy whipping cream
- 8 oz semisweet chocolate
Topping
- 4 tbsp Rainbow Candy Chips
Instructions
- Preheat the oven to 350°F. Line a 9×13 inch baking dish with parchment paper that overhangs slightly on the sides. This will make it easier to lift the brownies out of the pan for slicing and serving.
- In a large bowl, mix together the melted butter, oil, and sugar with an electric hand mixer on medium speed until well combined.
- Add the cocoa powder and beat until incorporated. Add the eggs, vanilla, and salt. Mix until smooth.
- Add the sifted flour and mix until just combined. Pour the batter into the prepared baking dish and smooth it into an even layer.
- Bake the brownies for 27-32 minutes, or until a toothpick inserted comes out clean with a few moist crumbs. Remove the pan from the oven and allow the brownies to cool completely.
- Meanwhile, place the heavy cream in a small pot over medium heat. Bring it to a simmer, then turn off the heat and add the chocolate chips. Allow the chocolate to melt for about 30 seconds, then whisk into a smooth consistency.
