I love summers in Italy. There may be more crowds on the streets, but there’s something magical about the warm nights, buzz of conversation, and incredible food. One of the most memorable things I tasted in Italy was their burrata, which is basically a ball of mozzarella cheese with a creamy interior. From the first bite, I was obsessed with the freshness and versatility — and I became determined to create a dish with burrata that would take me right back to Italy.

  • Broil the tomatoes: Toss the cherry tomatoes with the olive oil, salt, basil, and garlic in an oven-safe dish. Roast on low broil for 12-15 minutes, stirring once halfway through.
  • Assemble the dish: Tear the burrata into bite-sized pieces and arrange them on a serving platter. Spoon the roasted tomatoes and juices into the platter, then top with fresh basil and serve with toasted bread.

Hot tip: If you’re in a hurry, smash the garlic cloves instead of slicing them. You’ll still get all the garlicky flavor!
