Can you guys believe we’re already welcoming June?? This year is flying by, and now that school’s out for our boys, it’s officially summer. We are enjoying freedom as a family, which means making bad decisions like staying up way too late together — but I wouldn’t have it any other way! To celebrate another school year in the books and many months of hard work, here’s an easy and crowd-pleasing menu to give you more quality time with your family in the sun.

Tex-Mex Monday: Chicken Quesadillas
My boys have grown up eating these chicken, veggie, and cheese-packed quesadillas, and they still love them. It’s the perfect lunch or dinner to whip up in 30 minutes!

Hot tips
- Use shredded rotisserie chicken for a shortcut.
- Make the flour tortillas yourself using this easy guide (it’s so worth it!).
- Serve the quesadillas with sour cream, pico de gallo, and/or guacamole for dipping.
Taste-of-Italy Tuesday: Spaghetti Alla Nerano
You guys know how much I love Italy and its cuisine, and this dish brings me right back to my travels there. The creamy, cheesy pasta is studded with delicious bits of fried zucchini — so simple but so good.

- Dish up chicken piccata or marry me chicken for more protein.
Refreshing Wednesday: Shrimp Spring Rolls
These spring rolls are crunchy, bursting with flavor, and super easy to assemble. I love the combo of creamy avocado and juicy shrimp, and I always feel great after eating these.

- Add a “bangin'” flavor with Bang Bang shrimp, or keep it classic with 15-minute air fryer shrimp.
- Serve the spring rolls with this 5-minute peanut dipping sauce.
Meaty Thursday: Grilled Lamb Kabobs

- Use your favorite deli meat — salami, capicola, roast beef… you name it.
Salad of the Week: Tomato Peach Burrata Salad
This salad is vibrant, sweet and savory, ready in 15 minutes… shall I go on?? It’s one of my summer obsessions, especially when I have a bunch of ripe peaches to use up.

Dessert of the Week: Farmer’s Cheese Doughnut Holes
National Doughnut Day falls on the first Friday of June, which means we’ve got an excuse to eat more doughnuts! These tasty bites (also known as “ponchiki”) are yeast-free and ready in under an hour.
