This salmon sushi bowl lets you enjoy the wonders of sushi without being a sushi chef. It’s easy to put together and a perfect use of leftover rice and salmon!

This salmon sushi bowl is light, refreshing, and so filling. It’s actually one of my family’s favorite ways of using up leftover salmon and rice the next day for lunch. Most of the meal is already prepped, so all I do is quickly prep some toppings and I’m done! It really comes together in a matter of minutes and is so ridiculously good. Plus, salmon rice bowls also make for great packed lunches for work or an elevated picnic. Best of all? It tastes like a deconstructed sushi roll.
Sushi bowl vs poke bowl? A sushi bowl often uses cooked fish or raw (sashimi-grade) and is assembled with rice, veggies, and sauces. Poke bowls feature marinated raw fish, typically Hawaiian-style, with a savory dressing.

How to Make this Salmon Sushi Bowl Recipe
Whipping up a salmon bowl takes a little bit of light prep and a few fresh ingredients. If you use leftover salmon and pre-made rice, you can whip up these bowls in under 10 minutes.
- Cook the salmon and rice (if starting fresh): First you’ll need to have some cooked salmon and rice. I really love using salmon bites because they’re the perfect bite-sized pieces and each piece is slightly crispy. My recipes for cedar plank salmon and oven baked salmon make great salmon for bowls, too.
- Prepare the bowl base: Warm up the salmon and rice (if needed) or keep them cold. Divide the two cups of cooked rice and salmon evenly among four bowls.
- Top the bowls: Top each bowl with sliced avocado, cucumber, and seaweed. Add any more toppings of choice. Drizzle one tablespoon of spicy mayo and ½ tablespoon soy sauce or coconut aminos over each bowl.
- Finish the bowls: Sprinkle on extra seaweed and sesame seeds. Dig in!
Low-carb or gluten-free? Swap the rice with cauliflower rice and use tamari instead of soy sauce for a lighter, gluten-free version.




Tips for the Best Salmon Sushi Bowl
I make these salmon rice bowls at least once every couple weeks, if not more. That’s at least 20 times a year! Here are my pointers to help you make the best possible bowl.
- Make plain white rice or sushi rice: If you prefer plain white rice, go for it! If you want more of the sushi rice taste, make your own. Make the sushi vinegar by whisking two tablespoons of rice vinegar, two teaspoons of sugar, and a pinch of salt. Then, pour the mixture into hot rice and mix it up well. For a shortcut, just use seasoned rice vinegar (tip: this is not mirin!).
- Use leftover salmon (or any cooked protein): Leftover air fryer salmon, baked salmon filets, or even canned salmon works. Shrimp, chicken, tofu, or smoked salmon all make excellent swaps.
- Serve the bowl hot or cold: A warm rice and salmon base is cozy, but a chilled bowl is refreshing. Both are delicious!
- Make your own spicy mayo: Mix equal parts of mayonnaise and sriracha to make a spicy mayo dressing/sriracha mayo. You can also adjust the ratio if you want less/more heat. For extra richness, I use Kewpie mayo. Add a splash of sesame oil and lemon juice for a tangy twist. If you need a vegan version, use a vegan mayo.
- Opt for fresh seaweed when possible: Fresh seaweed is usually found in Asian markets. If you can’t find it, dried nori sheets work perfectly.
- Assemble just before serving: The bowl tastes best fresh, so keep the toppings separate until the last minute before serving – especially the avocado.

Topping Ideas
There are a million and one different toppings and ingredients you can add to your sushi rice bowl to make it your very own. Here are a couple of ideas to inspire you.
- Pickled veggies: Pickled onions, ginger, garlic, jalapeños, or quick-pickled cucumbers add a tangy punch.
- Fresh vegetables: Shredded carrots, edamame, bell pepper, cucumber(Persian or English cucumbers are best), or mango add freshness, a crunch, and/or sweetness.
- Fresh herbs: Cilantro, green onions, scallions, basil, or mint brighten the bowl.
- Crunchy toppers: Fried garlic, sesame seeds, toasted almonds, crispy wontons, furikake seasoning, or fried onions deliver texture.
- Sauces and heat: Drizzle sriracha, chili crisp, gochujang, eel sauce, or wasabi aioli to dial up the flavor.
Storage and Make-Ahead Tips
Store components separately to keep your salmon sushi bowl fresh and crisp.
- Refrigerator: Keep cooked salmon and rice in separate airtight containers for up to three days. Store prepped veggies (cucumber, seaweed) in separate containers for up to two days.
- Freezer: I avoid freezing if possible — a fresh bowl tastes much better. However, rice and salmon can be frozen separately for up to two months if needed.
Meal prep hack: For meal prep, portion the rice, salmon, and veggies into separate containers. Pack sauces on the side and add avocado at the last minute. Assemble bowls just before eating for the best texture.

- 2 avocados sliced
- 1/2 English cucumber sliced
- 1 oz seaweed sheets cut into small pieces
- 4 tbsp spicy mayo
