Can you believe the Fourth of July is next week?? This is one of my favorite (and busiest) times of the year — it makes me feel so alive, and it’s full of opportunities to spend time with family and friends. As June comes to a close, let’s enjoy a menu full of variety, flavor, and fresh ingredients!

Lazy Monday: Sheet Pan Shrimp and Veggies
By the time Mondays roll around, I’m usually left with tons of fresh veggies from the weekend farmer’s market. This sheet pan dinner is my go-to “clean out the fridge” meal — plus, it’s ready in under 30 minutes!

Hot tips
- Swap out any of your favorite veggies! I’ve tried squash, asparagus, cherry tomatoes, cauliflower, and more — and it’s turned out delicious every time.
- Serve rice, quinoa, or buckwheat on the side for a carb energy boost.
Nourishing Tuesday: Chicken Barley Soup
My husband Tim loves barley, so I have quite a few variations of soup that I make with this grain. This chicken version is a family favorite, and it makes a perfect lunch for the next few days!

Hot tips
- Whip up a batch of homemade chicken broth as a soup base, and sip on the leftovers for a nutrient-rich protein boost whenever you need it.
- Dip a slice of fresh sourdough or garlic Parmesan flatbread into the soup.
Winning Wednesday: Grilled Ribeye
I daydream about this steak recipe often. The juicy and tender texture, mouthwatering flavor from the grill, and quick preparation (20 minutes!!) make it a mid-week lifesaver.

Hot tips
- If you don’t feel like splurging on a ribeye, buy a NY strip steak, flat iron, hanger steak, or top sirloin.
- Create a steakhouse spread with mashed potatoes, grilled zucchini and mushrooms, and a Caesar salad or wedge salad.
Saucy Thursday: Zucchini Ravioli
If you’re like me, you probably crave light dishes when the summer heat hits. These zucchini ravioli are the perfect way to take advantage of ripe zucchini, and I love having a low-carb dinner option once in a while!

Hot tips
- If you’re looking for more protein, buy a rotisserie chicken from the store and serve the meat alongside the ravioli. Or, sauté up some ground beef and mix it into the sauce.
- Mop up all the delicious sauce with a side of breadsticks.
Hawaiian Friday: Grilled Huli Huli Chicken
Today is International Pineapple Day, so we’re celebrating with this Huli Huli chicken. The pineapple juice-infused marinade creates a caramelized crust on the chicken that’s finger-licking good!

Hot tips
- Serve the chicken with rice, grilled eggplant, and pineapple salsa to make it an entire feast.
Salad of the Week: Green Cabbage Cucumber Salad
Light, tangy, and refreshing, this crunchy salad is basically the Ukrainian version of the viral “green goddess” salad. I grew up eating it at weddings, dinners, and more, and I’m still obsessed with it!

Sensational Snack: Tomato Galette
Heirloom tomato season is in full swing, which calls for this stunning galette to showcase them. The flaky homemade crust, garlic and herb goat cheese, and vibrant tomatoes are a match made in heaven!
