How does “dinner in 30 minutes or less” sound? I have the most hectic schedule at the end of March, so I try to pick recipes that get food on the table asap. In my mind, the perfect dinner is easy to make, requires few ingredients, and results in minimal clean-up. These recipes are tried-and-true by my family, and I know they’ll be a lifesaver for you this week!

Stir-It-up Monday: Steak Stir Fry
I originally created this recipe to help moms with back-to-school season, but it’s a year-round staple. Whenever I’m in a rush, I whip up this protein and veggie-packed stir fry, and my kids love it. It’s the perfect way to start the week off strong!

Hot tips
- Have all your veggies chopped and make the sauce before you begin cooking. Stir frying is done in a flash!
- You can use any cut of beef, but flank steak is one of the cheapest and best options for stir frying.
- Slice the beef against the grain (in the opposite direction of the muscle fibers) for ultimate tenderness.
- Serve the steak and veggies with rice to round out the meal. Make a double batch for tomorrow’s dinner!
Simple Tuesday: Shrimp & Rice
If five ingredients and 15 minutes sounds too good to be true, give this shrimp and rice dinner a shot. It’s my go-to way to use up leftover rice, and it turns out delicious every time. (Did I mention you’ll only have to wash one pan?)

Hot tips
- For the best flavor and texture, buy large raw shrimp. I prefer the tail-on, deveined variety. If the shrimp are frozen, make sure to fully thaw them first.
- Keep the shrimp juicy by cooking them only until they turn pink and opaque. Any longer, and they begin to get rubbery.
- There are tons of variations for this recipe! Check out the post for ideas to make it creamy, spice it up, or add veggies.
Refresh Wednesday: Cobb Salad
It’s halfway through the week, which means a little salad pick-me-up. You guys asked me for this recipe for years, and let me tell you — it does not disappoint. I’m obsessed with how quickly it comes together (15 minutes!), how much protein is in it, and how amazing it makes me feel.

Hot tips
- Cook the hard-boiled eggs, bacon, and chicken in advance. I do it all in my air fryer!
- Use a salad spinner to prevent soggy lettuce.
- If you’re planning to have leftovers, keep the dressing separate from the salad and only add it when you’re ready to eat.
Nostalgic Thursday: Hamburger Helper
I didn’t grow up eating Hamburger Helper, but I can see why it’s such a hit. This homemade 30-minute, one-pot version is so tasty and comforting — your family will definitely be asking for it again!

Hot tips
- Get the kids involved by letting them pick out a noodle shape! Cavatappi, bowties, penne — any of their favorites.
- The pasta cooks in a thick sauce, so stir it often to prevent sticking.
- Season to taste. The amount of salt you add depends on the type of chicken broth you use.
Steamy Friday: Wonton Soup
Whenever I see the opportunity to transform takeout favorites into homemade specialties, I take it. This wonton soup is light, flavorful, and guaranteed to make you fall in love.

Hot tips
- I love the frozen chicken and cilantro mini wontons from Trader Joe’s. If you can’t find those, buy any dumplings from the grocery store or a specialty Asian market.
- The mushrooms are optional! Add your favorite veggies to make the soup your own.
- Use low-sodium chicken broth to balance out the soy sauce.
Breakfast of the Week: Potato Latkes
If you’re like me and sometimes get tired of eggs, these crispy potato latkes will be your new breakfast staple. They only take 20 minutes to whip up, and they’re irresistible when served with sour cream.

Dessert of the Week: Puff Pastry Pear Tartlets
Pears are in season, and these tartlets are one of my favorite ways to enjoy them. You’d never guess that four simple ingredients can produce such a stunning treat!
