How To Make Sausage Patties
Who would have guessed that delicious sausage patties take only 20 minutes to make from start to finish? Season the ground pork, shape the patties, and fry away!
- Mix together the seasonings: In a small bowl, mix together the brown sugar, rubbed sage, crushed red pepper flakes, ground black pepper, and salt.
- Season the pork: Add the ground pork to a large bowl and sprinkle the seasonings on top. Mix until evenly combined.
- Shape the patties: Divide the mixture into ten equal portions using an ice cream scoop. Shape the patties about 3.5 inches in diameter and 1/4-1/2 inch in thickness.
- Fry the patties: Set a large skillet over medium-high heat. Add the patties and fry for 3-5 minutes per side until the internal temperature reaches 160°F. Serve warm and enjoy!
Hot tip: If you’re using a nonstick pan to fry the patties, grease it with a thin layer of cooking oil to protect the surface.

Ingredient Variations
Breakfast sausage patties are known for their sweet and spicy flavor with a hint of sage. Making them from scratch means you can adjust the taste to your liking — so here are a few suggestions to get you started!
- Meat: Use ground turkey or chicken instead of the pork for a leaner protein. Or, use a mix! If using poultry, make sure the internal temperature reaches 165°F.
- Sugar: If you love maple flavor, swap the brown sugar for maple syrup. Or, cut out the sugar entirely for a more savory approach.
- Herbs/spices: Add fresh or dried thyme or marjoram for an herbal note. Sprinkle in nutmeg for woody warmth, or add fennel seeds for a sweet licorice flavor. Do you love heat? Increase the amount of red pepper flakes and include a pinch of cayenne pepper. Add a garlicky punch with minced garlic or garlic powder.
Tips From the Kitchen
Are you ready to make the best sausage patties you’ve ever tried? Follow these three tips for patties that are juicy, bursting with flavor, and sure to please a crowd.
- Marinate the sausage (optional). For optimal flavor, marinate the seasoned ground pork for at least an hour and up to overnight in the fridge. Cover the bowl or container to prevent the meat from drying out.
- Shape the patties evenly. Use a large ice cream scoop to divide the meat mixture, then flatten the patties out evenly for consistent cooking. We recommend aiming for 3.5 inches in diameter and 1/4-1/2 inch in thickness — the patties will shrink as they cook.
- Be mindful of temperature. Fry the patties over medium-high heat, and use a meat thermometer to ensure they reach the correct internal temperature (160°F). If the patties are browning too quickly, lower the heat.

Ways To Serve
Technically, this is a “breakfast” sausage recipe, but the fun doesn’t have to stop in the morning. Slide a patty onto your plate along with scrambled eggs, chop the sausage up and sneak it into a frittata or tater tot casserole, or enjoy a savory note with a stack of steaming pancakes. Sub this sausage for the ham in my english muffin breakfast sandwiches. Looking for something a bit heartier? Make Italian sausage kale soup, one-pan sausage and vegetable bake, or a classic sausage sandwich. If you love carbs, indulge in sausage and gravy with a side of mashed potatoes or English muffins.
Storage & Reheating
Do you have leftover sausage patties? You’ve come to the right place! Here’s how to properly store cooked sausage for the best experience.
- Refrigerator: To store for up to five days, place the cooked and cooled sausage patties in an airtight container and refrigerate.
- Freezer: To store for up to three months, transfer the cooked patties to a freezer-safe container and freeze. Place squares of parchment or wax paper between each patty to prevent sticking. Thaw the patties in the fridge overnight before reheating.
- Reheating: Reheat cooked patties on the stovetop or in the microwave until sizzling.
