This dish is one of the best things I’ve made in 2026. No joke! It’s been on repeat in my home ever since I first made it. I love the flavors and the easy ingredient swaps based on whatever ingredients I have on hand at the time. It makes it a new creation every time! It’s also super easy to be family and kid friendly at the same time — everyone gets to customize their bowls to their own liking.

So, how did I come up with it? Well, my biggest inspiration for this recipe was the classic Vietnamese noodle salad. Vermicelli noodles are thin rice noodles similar to spaghetti, and are used pretty frequently in Asian cooking. I’m a huge fan of lots of Vietnamese dishes, and of course I had to make something of my own that has a similar flavor and profile!

How to Make Vermicelli Bowls

My vermicelli bowls layer cool rice noodles, crisp lettuce, juicy turkey meatballs, and tangy pickled veggies under a punchy sriracha mayo drizzle. It’s totally delicious!

  • Prepare the sriracha mayo: Stir together the mayonnaise and sriracha. Refrigerate until ready to use.
  • Create the meatballs: Combine the ground turkey with garlic, green onions, soy sauce, cornstarch, and black pepper. Mix it all just until combined, then shape them into 20 small, slightly flattened meatballs.
  • Cook the meatballs: Pan-fry the meatballs in a single layer over medium heat, turning occasionally, until browned and the internal temperature reaches 165°F.
  • Prepare the vermicelli noodles: Cook the rice noodles according the package instructions, then quickly drain and rinse them under cold water. The cold rinse stops cooking and washes away starch so the noodles stay separate. Toss with a tiny amount of oil if you’re prepping ahead.
  • Build the bowls: Start your bowls with a bed of chopped romaine or butter lettuce and the cooked noodles. Arrange the meatballs, pickled veggies, cucumber, and cilantro on top. Drizzle generously with sriracha mayo and finish with a lime wedge. Enjoy!

Recipe Variations

Switch up the bowl to suit whatever you have in the fridge or your dietary preferences. Every part can be swapped if needed!

  • Change the protein: Use ground chicken, pork, or beef in place of turkey. Or, you can use whole pieces of the same meats, plus shrimp. For a vegetarian bowl, swap in crumbled firm tofu or a plant-based pan fried ground. Omit the meat entirely and double the veggies to make a salad.
  • Bake the meatballs: Arrange shaped meatballs on a parchment-lined baking sheet and bake at 400°F for 15–18 minutes until they’re cooked through. This is a great hands-off method that simplifies batch cooking and keeps the kitchen cool.
  • Swap the noodles: Use cooked rice in place of the rice vermicelli noodles. Jasmine or basmati rice, brown rice, or even cauliflower rice all work.
  • Make it a salad: Turn the bowl into a crisp salad by skipping the noodles and piling toppings onto extra lettuce or shredded cabbage. Then, use this dressing to top it all off!
  • Play with the sauces: Sriracha mayo delivers creamy heat, but other sauces can be great, too. For an authentic Vietnamese flavor, drizzle it with nước chấm, peanut sauce, fish sauce, or sweet chili sauce. A mild, kid-friendly version works beautifully with just a little soy sauce and lime juice.
  • Add more veggies: Tuck in fresh bean sprouts, thinly sliced bell peppers, shredded carrots, or a quick-pickled red onion.
  • Top with more greens: If you love playing around with fresh herbs, try thai basil, mint leaves, and cilantro.

Nước chấm tip: This sauce is sweet, sour, salty and is super popular with rice vermicelli bowls. Traditional bowls use it, but I personally love the flavor I get from the pickled veggies here. It’s ultimately up to you!

Tips for the Best Vermicelli Bowl

Ready for a few tips on how to make this bowl your favorite of all time? You got it!

  • Keep the meatballs juicy: Mix the turkey mixture only until the ingredients come together, as overworking makes meatballs tough. Then, use an instant-read thermometer and pull them off the heat right at 165°F, otherwise overcooking can lead to dryness, too.
  • Shape the meatballs with wet hands: A tip for you – when you shape meatballs, keep wetting your hands. It’ll keep the mixture from sticking!
  • Avoid overcrowding the pan: Cook meatballs in a single layer with a little breathing room. Crowding steams them instead of searing, so fry in two batches if needed. Make sure to also wipe the pan between batches for the best browning.
  • Rinse the noodles well: After cooking, rinse the vermicelli under cold running water quickly until they’re completely cool. This halts their cooking and washes away excess starch that causes clumping.
  • Assemble the bowls at the last minute: Keep all the bowl components separate until serving. Lay everything out only when you’re ready to eat so the crisp things stay crisp. Drizzle the sauce right on top and pass any extra around the table.
  • Dry and slice the veggies thinly: When slicing the veggies, make sure to slice them thinly. Then, pat them dry before adding to the bowl to avoid too much sogginess.
  • Balance the sauce to your palate: Stir more sriracha into the mayo for heat, or brighten it with a squeeze of lime.

Serving Suggestions

These bowls are perfect for weeknight dinners, meal-prep lunches, or a build-your-own party spread. Here are some of my ideas on how to serve your bowls.

  • Build-Your-Own Bar: Set out separate bowls of noodles, lettuce, meatballs, pickled veggies, cucumber, cilantro, jalapeño, lime wedges, and sauce. Let everyone customize their own creation.
  • Pairings: Pair the bowls with crispy spring rolls, egg rolls, or a simple cucumber salad for a larger spread.
  • Finishing touches: Garnish the salad with crushed peanuts, extra herbs, and a generous squeeze of lime.

Storing Vermicelli Bowl Ingredients

The biggest takeaway for storing is to keep the bowl components separate. Refrigerate cooked meatballs, noodles, vegetables, and sriracha mayo in separate airtight containers. This protects the texture and lets you assemble fresh bowls in minutes.

  • Meatballs: Keep meatballs in the fridge for up to four days in an airtight container. Reheat in a skillet over medium heat or in the microwave until warmed through.
  • Noodles: Toss drained vermicelli with a little oil, pack into a sealed container, and refrigerate for up to five days. To refresh cold noodles, rinse briefly under hot water and drain.
  • Pickled veggies: Quick-pickled carrots and daikon are best stored in a jar in the fridge for up to a week. The tangy crunch only improves over time.
  • Sriracha mayo: Sriracha mayo can be stored in a small airtight container for a week in the fridge. Stir it again before drizzling on your bowls.
