Growing up, my mom would fry up a batch of zucchini chips before it was even considered “cool”. My siblings and I loved this snack (who doesn’t love fried, crunchy snacks!?), but as I grew up, I wanted to put a grease-less spin on them. So, when I realized the power of the air fryer, I knew I had found the answer to tasty zucchini chips without the hassle of deep-frying.

After a few tries, I finally landed on these air fryer zucchini chips. The chips become golden on the outside, whilst still juicy on the inside. The seasoning levels up the flavor of these chips from bland to fabulous.

How to Air Fry Zucchini Chips

Prep time for these zucchini chips takes only 10 minutes, and cooking time is a total of 20 minutes. Take out the three bowls to prep and plug in the air fryer to get started.

  • Prep the three breading bowls: In one bowl, whisk the eggs. In a separate bowl, mix together the bread crumbs (Panko) and Parmesan cheese. In a large shallow plate or bowl, combine the flour, salt, pepper, and Italian seasoning.
  • Cut the zucchini: Cut the zucchini into 1/4-inch thick rounds.
  • Season: In this exact order, dip each zucchini slice into the flour mixture, then the eggs, and finally the Panko/Parmesan mixture.
  • Air fry: Place the breaded zucchini slices into a single layer in the air fryer basket. Air fry for about five minutes on each side at 400°F.

Hot tip: If you want extra-flavorful chips, add a teaspoon of garlic powder or any of your favorite seasonings to the Parmesan/Panko mixture.

Tips For the Perfect Zucchini Parmesan Chips

These Parmesan zucchini chips are astonishingly, wonderfully, crazy easy — but as always, I want to leave no doubt in your mind that this recipe is great. So, check out these pointers to make the best use of your time.

  • Use a mandoline slicer: This mandoline slicer makes it super easy and fast to evenly slice your zucchini. Your prep time may be even quicker when you use this valuable kitchen tool.
  • Pat the zucchini dry: If you’re afraid the chips may be too soggy, follow this tip: salt both sides of the zucchini after it is sliced, then allow it to sit at room temperature. The salt pulls the excess moisture out and make for even crispier chips. After 15 minutes, pat both sides dry before breading the chips.
  • Avoid overcrowding the basket: For evenly cooked chips, arrange them in a single layer in the air fryer basket to allow the air to circulate properly.
  • Flip halfway through: Don’t forget to flip the chips halfway through the cooking time! This way, bothsides of the chips become crispy — not only one.

Serving Air Fryer Parmesan Zucchini Chips

Whether you’re whipping up a game day spread or hosting a summer BBQ, air fryer Parmesan zucchini chips are the perfect recipe to lean on — and boy, do I make these chips every chance I get! Pair them with air fryer chicken wings, pigs in a blanket, air fryer cheesy jalapeño poppers, and air fryer potato skins.

Now for the dipping — whip up our ranch dressing, tzatziki sauce, or chimichurri sauce and dip to your heart’s desire. I like to put out a couple dipping sauces for a variation of flavors. If you don’t feel like making a homemade sauce, pull out what you have in your fridge and make it easy on yourself. Hot sauce, BBQ, and most creamy, bottled dressings do the trick.

Storing Air Fryer Parmesan Zucchini Chips

If you happen to have leftover chips, that’s great! They may lose a little bit of their crisp, but good news — all it takes to restore them is a few minutes in the air fryer.

  • Refrigerating: Store leftover zucchini chips in an airtight container in the fridge for up to five days.
  • Reheating: There is no better reheating mechanism than the air fryer. To return your chips back to their crispy state, pop them into the basket at 400°F for 2-3 minutes.

Hot tip: Although tempting, freezing the chips isn’t a great idea. Zucchini hold a ton of moisture and once they defrost, the breading will be super soggy.
