I am SO excited that spring is right on the doorstep. You guys know how much I love fresh produce and cooking with ingredients that are in season. To celebrate the arrival of spring, we’re celebrating light and bright meals this week. It’s not quite time to say goodbye to the “cozy” foods yet, but I can’t wait to embrace fresh flavors with you all!

Sushi Monday: California Sushi Bowl
If you’re a sushi lover like me, this meal should make your mouth water. It only takes 10 minutes to throw together, and the flavors are just as light and refreshing as your favorite sushi roll.

Hot tips
- The sauce adds the majority of the flavor here. Adjust the sriracha to your liking and make the sauce a day in advance for more punchiness.
- For perfect sushi rice, use short grain rice and rinse it thoroughly to wash the starch off.
- Add your favorite toppings — tuna, sesame seeds, ginger, etc.
Quick Bite Tuesday: Air Fryer Chicken Parmesan
Today is National Chicken Parm Day! As much as I already love this dish, cooking it in the air fryer made me fall in love with it even more. It’s ready in 15 minutes, uses less oil, and produces a super crispy crust.

Hot tips
- I’ll never pass up an opportunity to recommend my favorite air fryer!
- Pound the chicken breasts into an even thickness to ensure they cook at the same rate.
- Air fry the chicken Parm in a single layer, cooking in batches if needed.
- Serve the chicken over a bed of spaghetti with shortcut garlic knots.
Steamy Wednesday: Herbed Chicken Noodle Soup
Soup is always on the menu for me, and when I think of spring, this recipe is the first one that comes to mind. It’s refreshing, nutritious, and super quick and easy to make. This’ll become a family favorite!

Hot tips
- Use bone-in chicken thighs or drumsticks for the best flavor.
- Don’t skimp on the fresh herbs, they add so much flavor! I also love adding freshly squeezed lemon juice to the soup at the end for even more brightness.
- Soup is never complete without crusty bread!
Slurpy Thursday: One-Pot Veggie Yakisoba
Less dishes. Easy for beginner cooks. A great way to hide veggies. If you like the sound of this, yakisoba is the meal for you. As a busy mom, I’ll never get tired of making these delicious noodles and only having one pot to wash!

Hot tips
- You can find yakisoba noodles in most grocery stores or Asian supermarkets. If you’re struggling to find them, feel free to use ramen noodles instead.
- Invest in a good wok for seamless stir-frying.
- Use whatever veggies you have on hand! Mushrooms, bean sprouts, zucchini… you name it.
- Chop all the veggies and make the sauce before you start cooking — stir frying moves quickly!
Fishy Friday: Baked Butter Cod
I came up with this cod recipe hoping to get dinner on the table easily, quickly, and with minimal dishes. And let me tell you… it checks all the boxes and more!

Hot tips
- Pat the filets dry before cooking them for the perfect texture.
- To keep the cod juicy and tender, cook it with plenty of butter and lemon and avoid overcooking it.
- Check out the recipe post for more seasoning ideas.
- Serve the cod with your favorite grains (like rice or quinoa) and/or veggies (like oven-roasted asparagus or a Caesar salad). Don’t forget a side of tartar sauce!

You guys know I LOVE brioche, and I was so excited when I saw that Friday is National Brioche Day. This indulgent pudding features custard-soaked brioche slices, pears, and chocolate… yumm.

Drink of the Week: Green Smoothie
After the long winter, my body craves fresh fruit and veggies. This green smoothie is loaded with nutrients, and it’s the perfect morning or midday pick-me-up. Don’t be surprised if you find yourself making it every day!
