Painless Monday: Philly Cheesesteak Casserole
Just the name “Philly cheesesteak” makes me feel warm inside. Combine it with the ease of a casserole, and I’m hooked. It may have less carbs and bread than the original, but it’s just as delicious!

Hot tips
- If you’re missing the bread from a classic Philly cheesesteak, put a few spoonfuls of this casserole in between burger buns “sloppy-jo” style.
- Feel free to use ground chicken or turkey instead of beef, if that’s what you have.
- Mondays can be busy already. In case you don’t want to cook at all on Monday, prep and cook this casserole the night before so all that’s left to do is reheat it!
“Soup”-er Tuesday: Beef Barley Soup
I love making soups at the beginning of the week. The pot lasts my family a few days at least, giving us a few leftover options to enjoy for lunch during the week.

- Use any beef cut you have in the fridge. Anything from stew meat to leftover steak pieces work great!
- Don’t forget a slice of bread to soak up all the tasty broth! Honey wheat bread can be made in only a few hours!

I love Tex-Mex flavors… the savory sauces, spices, often mixed with melty cheese — YUM! Plus, I love the variety of fresh sides that pair great with these sizzlin’ enchiladas! You simply cannot go wrong here.

- Serve the enchiladas with a side of salsa, guacamole, pico de gallo, sour cream, and/or air fried tortilla chips.
- Enchilada sauce often comes in mild, medium, or hot spice levels. Choose the level that suits your tastes the best.
- For a leaner version, use ground turkey or chicken. The flavor will be more mild, but it’s a great alternative for those looking for leaner meals.
Topping Thursday: Perfect Baked Potato
There’s literally only three ingredients needed for this recipe — potatoes, oil, and salt. You may want to add a few toppings to your delicious spuds… good thing yesterday’s meal may already have you covered!

I love easy make-ahead breakfasts that taste as if they are freshly baked. This ham and cheese quiche is just that. It’s loaded with eggs, cheese, and ham, which makes for a filling breakfast if you ask me!
