Well, this officially marks a year of weekly menus! I have loved sharing a bit more of my world with you guys, and I hope that these meal plans have inspired you. Cooking for a family is a lot of work, but it’s also so much fun if you embrace your mistakes and learn how to be creative. THANK YOU for sticking around — and now, it’s time for one last menu.

You can’t go wrong with a Philly cheesesteak. This is a hearty sandwich stuffed with juicy chicken, caramelized peppers, onions, and mushrooms, and melty provolone cheese. Ready in 30 minutes!

- Accompany the sandwiches with 15-minute air fryer French fries.
- Store the hoagies and chicken/veggie mixture separately, then assemble a sandwich fresh for lunch the next day.
Low-Carb Tuesday: Lasagna Stuffed Peppers
These three-cheese stuffed peppers do a mighty fine job at disguising themselves as lasagna (can you tell I first tried them on the keto diet?). They’re so decadent and packed with protein!

Hot tips
- Whip up 5-minute marinara sauce to elevate the flavor of these peppers.
- A Caesar salad is the obvious choice for a side, but if you’re missing the carbs, enjoy a baguette (I won’t judge).
Cozy Wednesday: Lamb Stew
Happy first day of October! Whether it’s still warm out or starting to get chilly wherever you live, this hearty lamb stew is phenomenal. I want to curl up and dig into a steaming bowl of it just writing this…

Hot tips
- Opt for lamb shoulder — it gets super tender when braised.
- Growing up in Ukraine, we would usually pair such a rich dish like stew with pickled veggies. Pickled cucumbers and pickled cabbage are great options!
Tex-Mex Thursday: Ground Beef Enchiladas
We eat a ton of Tex-Mex food, and these enchiladas have earned their place in the rotation. They’re so easy to assemble and absolutely packed with flavor!

Hot tips
- Make your own flour tortillas to take this dish to the next level.
- Complete the table spread with guacamole, pico de gallo, and sour cream as toppings, and add Mexican street corn salad as a side.
“Fry It” Friday: Air Fryer Chicken Thighs
Only three ingredients?? Yep, you heard that right. I throw almost everything into my beloved air fryer, so why wouldn’t I do the same with these mouthwateringly crispy chicken thighs?

Hot tips
- Mashed potatoes are a must to complement the chicken, along with Parmesan panko roasted veggies.
Snack of the Week: Air Fryer Apple Chips
You guys, these apple chips are literally addicting. Pick your favorite apples, sprinkle the slices with cinnamon, and air fry them for 20 minutes — say hello to your new favorite snack.

Dessert of the Week: Pumpkin Creme Brulee
If you’re intimidated by making creme brulee, take this as your sign to try it! The silky pumpkin custard topped with caramelized sugar is like the most amazing version of a pumpkin pie ever.
