The boys are back in school next week… I really can’t believe how quickly the years have flown by. These days, Jacob and Ethan are eating super clean and looking for all the protein they can get, so meal-prepping at the beginning of the week is a lifesaver for me. As the school year begins, let’s focus on wholesome ingredients and delicious ways to put them together!

Stuffed Monday: Ukrainian Stuffed Bell Peppers
I have sooo many stuffed pepper recipes on the site, but this beef, buckwheat, and mushroom version will always be one of my favorites. It’s a taste of my childhood, and the leftovers are amazing!

Turkey Tuesday: Air Fryer Turkey Meatballs
My trusty air fryer probably wishes that it could get a break sometimes, but how can I resist making these four-ingredient, 30-minute turkey meatballs? They’re so juicy and crispy, they’ll be “gobbled” down in no time!

- Make a double batch and freeze the raw or cooked meatballs for up to three months.
- Serve the meatballs with mashed potatoes or rice and the perfect veggie side dish, or go a different route with homemade pasta and marinara sauce.
Fancy Wednesday: Grilled Lamb Chops
Today is Tim and I’s 20-year anniversary! We both love grilled meat, so what better way is there to celebrate than with a mouthwatering batch of rosemary lamb chops?

- Round out the meal with grilled asparagus, grilled potatoes, and chimichurri.
Italian Thursday: Tuscan Chicken Pasta
Tuscany is one of my favorite places to visit of all time, and this pasta dish is a tribute to the wonderful flavors there. Seasoned chicken, sun-dried tomatoes, spinach, and creamy pasta… all in 30 minutes!

- Looking for sides? Add on an arugula Caprese salad and breadsticks to mop up the delicious sauce.
Five-Star Friday: Steak Sandwich
A good sandwich always hits the spot, and this tender ribeye, sautéed onion, herb butter, and melted Havarti sandwich is perfection. It’s a staple in our house!

- Take dinner to the next level with a Caesar salad and 15-minute air fryer French fries.
Snack of the Week: Farmers Cheese Vareniki
I always joke that these soft pierogies filled with sweet farmers cheese are the way to Tim’s heart. All jokes aside, he is truly obsessed with them, and our anniversary week is the perfect excuse to make them!

Dessert of the Week: Lemon Poppy Seed Muffins
These lemon and vanilla-scented muffins are studded with poppy seeds and topped with a zesty glaze. All my lemon lovers, this one’s for you!
