Memorial Day marks the beginning of grilling season for our family. We usually have friends over, and the celebration consists of lots of outdoor time, talking, and eating (and football for the boys). A huge part of Memorial Day is the food, of course, so let’s get into this week’s menu that will leave you with a smile on your face and a full belly!

Memorial Day Monday: Messy Burgers
We are 100% a burger family, especially on Memorial Day. These burgers may be true to their name, but the sautéed onions and mushrooms are so worth the mess!

Hot tips
- Offer sliced tomatoes, lettuce, onions, pickles, and cooked bacon as toppings. Don’t forget the condiments!
- I love to serve these burgers with crispy smashed potatoes or grilled potatoes in foil, a big Caesar salad, and Caprese pasta salad.
Light Tuesday: Sheet Pan Nachos
Chances are you’re probably taking it easy on your stomach today (at least I am). We always end up with tons of leftovers after Memorial Day, so I try to repurpose them into light meals like these nachos.

Hot tips
- Use any leftover chips and veggies from yesterday. Instead of cooking up more ground beef, crumble up any leftover burgers.
- Get saucy- this creamy tomatillo dressing is a delight drizzled over nachos!
Meaty Wednesday: Smoked Beef Brisket
Today is National Brisket Day, so it’s only natural to feature this amazing recipe. The prep only takes 20 minutes, and the beef turns out unbelievably tender and flavorful!

Hot tips
- If you don’t have a smoker, make this slow cooker beef roast instead.
- Serve the brisket with any leftover Memorial Day sides, or whip up scalloped potatoes and a purple cabbage salad. Use the leftover meat in a burrito or sandwich for lunch!
Herby Thursday: Herb Chicken Noodle Soup
This soup is absolutely packed with protein, fresh herby flavor, and yummy carbs. It’s a soup for everyone (kids especially love it!), and the leftovers reheat so well for days to come.

Hot tips
- For the best flavor, use bone-in chicken thighs or drumsticks.
- Dill and green onions are my favorite herbs for this soup, but feel free to swap in anything else you have on hand.
Fishy Friday: Cedar Plank Salmon
It’s time to fire up the grill again — because we’ve got one of my favorite salmon recipes ever on the menu for today. If you’ve never tasted cedar-flavored salmon, you’re in for a treat!

Hot tips
- I highly recommend these cedar planks. Remember to soak the planks in cold water for at least 30 minutes to prevent them from burning on the grill.
- Dish up grilled zucchini and squash to get more veggies in, or indulge in a Greek watermelon feta salad for a touch of sweetness.
Breakfast of the Week: Bacon Egg Bites
My boys love these cheesy, chock-full-o’-bacon egg bites! They’re packed with protein and require only four ingredients, making them a perfect breakfast for a busy week.

Dessert of the Week: Fresh Fruit Tart
Everyone always gasps when they see this fruit tart. It’s just as delicious as it is stunning, and you can use any fresh fruit that you’d like.
