Even when the sun is shining brightly and our family has a bunch of events planned, there’s nothing I love more than creating quality meals in the comfort of my own kitchen. However, my summer schedule consists of being out-and-about so much that I look for easy, short-cut recipes to get dinner on the table fast. If you’re in the same boat, this week’s menu is for you!

“Mamma Mia!” Monday: Italian Pasta Salad
I Iove how this salad bursts with fresh flavor and vibrant colors — it’s so fun to make and eat! Toss together cooked pasta and a medley of veggies, meat, and cheese for a taste of summer. (Don’t forget the fresh basil!)

Hot tips
- To make this meal more filling, grab a rotisserie chicken from the grocery store. Any leftover chicken can be used for Wednesday’s pizzas.
Grilling Tuesday: Grilled Chicken Kebabs
I’ve been making these kebabs for so many years, and my mouth still waters when I think about them. I recommend marinating the chicken overnight for maximum flavor!

Hot tips
- I usually opt for boneless skinless chicken thighs because I love the flavor, but feel free to use chicken breasts instead.
- Thread any extra veggies you have laying around onto the skewers. Bell peppers, zucchini, squash, onions, and mushrooms are some of my faves.
Pizza Wednesday: Margherita Flatbread Pizza
Flatbread pizza always comes in clutch when we’re craving pizza but don’t want to order out or wait for dough to rise. Buy a package of flatbread, your favorite pizza sauce, and toppings, and fire up homemade pizzas in 20 minutes!

Hot tips
- If you want to level it up, use homemade naan bread.
- For more protein, add prosciutto, pepperoni, ham, or grilled chicken.
- Serve the pizzas with a Caesar salad to get those greens in!
Luxurious Thursday: Salmon Florentine
It’s creamy, tender, and super flavorful… let’s hear a round of applause for this salmon Florentine! Made in 25 minutes with a handful of simple ingredients, it’s a restaurant-worthy dish that my family devours every time.

Hot tips
- Mop up all the yummy sauce with homemade pasta, rice, or roasted potatoes.
Easy-Peasy Friday: Carne Asada
This is one of our family’s all-time favorite meals. I love how I can quickly whip up the marinade in the morning and leave the meat to soak up tons of flavor just in time for dinner. Plus, the options for how to enjoy the meat are endless!

Hot tips
- Serve the carne asada with flour or corn tortillas, pico de gallo, guacamole, and black bean corn salad.
Breakfast of the Week: Frittata
This 30-minute frittata is a delicious and filling way to start off your day. I love adding cherry tomatoes and kale, but feel free to swap out any other veggies you have on hand!

Dessert of the Week: Perfectly Moist Vanilla Cupcakes
National Cupcake Lovers Day falls on Friday this week! If you ask me, that’s the perfect excuse to indulge in a batch of these melt-in-your-mouth, vanilla-scented cupcakes.
