It’s the first week of August, and we’re enjoying every bit of sunshine and summer relaxation we can before the boys go back to school. As a mom, gathering around the dinner table is one of my favorite parts of the day because it’s a reminder that family is everything. This week, I am thankful for homemade meals that nourish our bodies and bring us all closer together!

Ukrainian Monday: Traditional Cabbage Rolls
These cabbage rolls (or “holubtsi”) are inspired by my grandma. I dream about the delicious rice, sautéed veggie, and ground meat filling all the time, and the best part is the creamy sauce on top… mmm.

Hot tips
- Add more to the table with mashed potatoes, pickled mushrooms, and/or olivier potato salad.
- Leftover cabbage rolls are incredible. Save the leftovers for lunch throughout the week!
20-Minute Tuesday: Air Fryer Pork Chops
We’ve been using the grill so much lately, but I don’t want to forget about our humble friend: the air fryer! These garlic-and-herb pork chops are so juicy and tender — you’ll be wondering why you haven’t made them this way forever.

Hot tips
- Serve the chops with crispy smashed potatoes and air fryer broccoli.
- Use the leftover pork as an excuse to make Cuban pork sandwiches for lunch tomorrow!
Wok Wednesday: Korean Beef Stir Fry
I make some version of a stir fry at least once a week. It’s a great way to get tons of veggies in, and I love how minimal the clean-up is (hooray one-pan meals!). This Korean beef stir fry is a staple in our family.

Hot tips
- Dish up spicy chili noodles, steamed rice, or pickled cabbage on the side.
Seafood Thursday: Grilled Salmon Kebabs
These grilled salmon skewers are bright and lemony, full of protein, and ready in 20 minutes. If you’re tired of baking salmon in the oven, you need to try this!

Hot tips
- If you have any leftover rice from yesterday, serve it with the kebabs. Or, get more veggies in with grilled asparagus.
- Save any leftover salmon for salmon sushi bowls — they make a great lunch!
“Buon Appetito” Friday: Stuffed Zucchini Boats
You guys know how much I love zucchini, so National Zucchini Day is something I can’t pass up. Grab a handful of zucchini, hollow them out and stuff them with meat sauce, and bake! This dish tastes like it’s straight out of Italy.

Hot tips
- Now that you’ve got the entrée figured out, whip up a Caesar salad and garlic bread to complement it.
Snack of the Week: Eggplant Pepper Dip
This garlicky, herby dip is the perfect way to use up veggies. It has a deep roasted flavor, and it’s even better with fresh bread or crackers.

Dessert of the Week: Raspberry Coffee Cake
Moist and fluffy cake with fresh tart raspberries speckled through it… my mouth is watering just thinking about it. Feel free to use any berries you have on hand!
