Is the heat hitting anyone else extra hard right now?? I’m loving this summer weather! One of my favorite parts about this time of year is visiting the farmer’s markets and snagging peak-of-the-season produce. This week, let’s take advantage of summer ingredients and refresh our bodies with these easy and light meals.

Cheesy Monday: Sheet Pan Quesadillas
I’m obsessed with sheet pan meals and Tex-Mex food, and these quesadillas check all the boxes. They’re so easy and quick to put on the table, and my boys love them. (Plus, it’s National Tortilla Day!)

Hot tips
- Use shredded rotisserie chicken for a shortcut.
- Serve pico de gallo, salsa, guacamole, and sour cream on the side.
Seafood Tuesday: Lemon-Herb Baked Trout
Whenever I’m craving fish, this flavorful, juicy trout always hits the spot. There’s something so nostalgic for me about picking through the little bones — it makes me feel like a kid again.

Hot tips
- If you don’t have any fishing fans in your family, buy whole trout from Costco or a specialty Asian supermarket.
- Serve the trout with mashed potatoes, air fryer sweet potato fries, or an arugula Caprese salad.
Meaty Wednesday: Grilled Pork Tenderloin
You guys… I promise that you’ve never had a pork tenderloin so juicy. The marinade and grill flames give the meat so much flavor, and the best part is — it only takes 15-20 minutes to cook!

Hot tips
- Keep the grill out for grilled corn on the cob and grilled eggplant. If you have any leftover mashed potatoes or salad from yesterday, now’s the time to finish it up as a side!
Superfood Thursday: Quinoa Kale and Avocado Salad
I love how much protein and fiber this salad has — it’s light and satisfying at the same time! With only six ingredients, it’s the perfect mid-week lunch or dinner to throw together in a rush.

Hot tips
- Take this salad up a notch with homemade ranch dressing.
- Dish up any leftover trout or pork tenderloin to accompany the salad.
Asian Friday: Teriyaki Chicken Skewers
Isn’t there something so fun about eating meat on a stick? These two-ingredient chicken skewers are a staple in our family — try them, and you’ll see why!

Hot tips
- Use homemade teriyaki sauce (it only takes 10 minutes to make!).
- Cook up a batch of rice to go with the skewers, or add a crunch with ramen noodle salad.
Snack of the Week: Veggie Charcuterie Board
With so many colorful, tasty veggies in season, making a crudités platter is a no-brainer. Take a stroll through your local farmer’s market and create this vibrant display for friends, family, or yourself!

Dessert of the Week: Cherry Galette
It’s peak season for cherries right now, and this cherry galette is one of my favorite ways to showcase these stunning stone fruits. The buttery crust and juicy filling make it a family favorite!
