Mother’s Day is right around the corner, which means this mama is taking it extra easy this week. You guys know how much I love a good latte, pretty flowers, and chilling in my comfy loungewear, but I also love to cook. That’s why my kitchen is staying open this week and I’m sharing seven of my easiest, most low-maintenance meals to help you relax. I hope this menu brings some extra joy to the dinner table!

Cinco De Mayo Monday: Burrito Bowl

The first job I had was working at a Tex-Mex restaurant, and Mexican cuisine has been special to me ever since. I love the customizability of this burrito bowl recipe — you can accommodate literally anyone’s tastes by setting up a build-your-own-bowl station!

Zesty Tuesday: Lemon Chicken Pasta

I’m a sucker for 30-minute dinners, especially when they’re bursting with vibrant lemon flavor and easy to prepare on lazy weeknights. This lemon chicken pasta is a family favorite!

Steakhouse Wednesday: Reverse Sear Steak

If you’ve never tried this method of cooking steak, prepare to have your mind blown. Once I found out this steakhouse secret and tested it myself, I vowed to never go back to my old ways.

P.S. Don’t let the name fool you, it’s easier than it sounds!

Hot tips

  • Ribeyes are my fave, but if you’re looking for a cheaper option, go with NY strip steak or sirloin.
  • While the steak is cooking, toss together air fryer potato wedges and an arugula salad for the most epic dinner combo.

Comfort Food Thursday: Tomato Basil Soup

Something about a big steaming bowl of tomato soup is so nostalgic. It always hits the spot when I’m craving soup, and it’s ready in 30 minutes. This version uses canned tomatoes for an extra-easy (but just as delicious) shortcut!

Hot tips

  • Look for high-quality Italian canned tomatoes without any additives (Cento brand is my go-to). You’ll taste the difference!
  • Air fryer grilled cheese is a classic pairing, but I also love dipping homemade focaccia or a baguette into the creamy soup.

Copycat Friday: Costco Chicken Bake

I’ve been a Costco aficionado for years, and one of my go-to purchases there is the frozen chicken bakes. You guys — believe me when I say that this version is even better. It’s a breeze to throw together, packed with protein, and super tasty and filling.

Hot tips

  • My overnight pizza dough is seriously so easy to make, but feel free to buy it from the store instead. Trader Joe’s has a great pizza dough in the refrigerated section.
  • My favorite side dish to pair with this chicken bake is a Caesar salad. Make it yourself or buy it from the store!

Brunch Bonus: German Pancake

This giant, fluffy pancake is the perfect way to spoil that special woman in your life (or yourself!). My mouth is already watering thinking about the crispy edges and delicious toppings…

Dessert of the Week: Tiramisu Cake

Coffee-soaked ladyfingers, fluffy cream cheese frosting, and rich chocolate come together in this indulgent cake. I LOVE tiramisu, especially when it’s in cake form!
